I was getting into a breakfast rut. I know it’s the most important meal of the day, yada, yada, yada…but I was getting so bored! I’ve been eying Kelly in TX’s Apple Skillet, named by her daughter, since she posted the recipe two weeks ago.
It doesn’t matter if it’s a Wednesday or a Saturday, this was delicious! And easy. It almost seemed too easy for how delicious it was. It’s a light, fluffy and thick pancake with an apple pie saucy-syrupy topping all baked in a cast iron skillet like an upside down cake.
How to make Apple Skillet:
3-5 apples
1/2 stick butter
1/3 cup brown sugar
1 teaspoon ground cinnamon
1 cup baking mix (Bisquick or homemade version)
1 cup milk
1 egg
1/3 c sugar
Peel, core and slice apples. I used my apple peeler/corer/slicer gadget–makes for fast apple preparing.
After they’re spiral sliced, just slice down the middle and you have slices!
Melt butter in cast iron skillet–I used a 10″ skillet and it worked perfect. Add in brown sugar, cinnamon and apple slices. Cook until apples begin to soften, stirring often and being careful not to burn the sugar.
While the apples are cooking, mix together baking mix, milk, egg and sugar.
After apples are soft,
pour batter over apple mixture but do not stir in. Sprinkle the top with a little cinnamon and more sugar, if desired.
Place skillet in preheated oven and bake at 375 degrees for about 15 minutes or until top begins to turn golden.
Kelly suggested sprinkling the tops with powdered sugar–so I did!
Won-der-ful! This was my breakfast and lunch. Thank you, Kelly, for another great recipe! I do believe this will be a breakfast when the family all gets together next (with a few skillets of course!).

Jan — I didn’t even think of turning it out, I just dove in! I cut it like a pie and took a piece out and flipped it onto my plate. Piece after piece.
But it probably could be flipped out onto a plate, it came out beautifully with a pie server.

Man O Man is this good!!! I read this earlier and my mouth started to drool. I needed to use some apples I had in the fridge…perfect timing.I am sitting here right now nibbling away on a BIG piece of this. Think if you had a whole bunch of peeled/sliced apples in the freezer? Would be even quicker to make this breakfast/brunch/lunch/supper!

Was looking at a couple of 6″ cast iron pans just the other day, thinking how great they would be for individual servings of something. This would be ideal for that!

Just made this for lunch, and I have to say, YUM!!!
Even though I don’t think I cooked it quite long enough, it was a little bit doughy in the middle, but we ate it up so fast no one noticed.
I would have had to wade through the snow to the camper to dig out my cast iron frypan, so cooked the apples in a nonstick skillet and transferred them to my stoneware round baker pan and then poured on the biscuit mix part.

Such gorgeous pics, Cindy!! I hadn’t been on the computer all day (I have a sheep with pink eye 🙁 )and this was such a nice surprise. I do think pecans are a wonderful idea…gotta throw some in next time! I’ve served ours both ways – right out of the skillet and taken out onto a plate, but I don’t invert it. It comes out pretty easily when it cools a bit. We like it with a side of bacon on Saturday mornings. 🙂

I made this on Sunday and it was really good. My guys loved it. Little man added some maple syrup to his. It was filling, made the kitchen smell good and tasted great. What more could you want?
