Coconut cream pie lover’s dream come true.

Servings: 6-8
Prep Time: 15 mins Cook Time: 6 minutesIngredients
1 can coconut milk
1 cup 1/2 & 1/2
2 eggs
3/4 cup white sugar
1/3 cup flour or cornstarch (I used cornstarch)
1/4 tsp salt
1 cup flaked coconut, toasted
1 teaspoon vanilla or coconut extract (I used 1/2 of each)
1 (9 inch) pie shell, baked
whipped cream
Directions
In a large microwavable bowl, whisk everything together except the extract and coconut. Microwave on full power, whisking at the end of each minute. Keep cooking until it reaches desired consistency. (I cooked mine 6 minutes.)
Add flavoring and coconut. Pour into crust. Chill. Add cream.
