A delicious, slightly spicy green tomato sauce that can be used from anything from pizza to stews. From A Householder’s Guide to the Universe, by Harriet Fasefest.

Servings: lots--makes large pot
Prep Time: 20 minutes Cook Time: 1 1/2 to 2 hoursIngredients
5 pounds green tomatoes, chopped with skins on
1 large bulb (about 10 cloves) garlic, peeled
1/2 cup olive oil
1-2 teaspoons crushed red pepper (or more to taste)
2 1/2 cups white wine
1/2 cup pepperocini
Salt and pepper to taste
Directions
Peel garlic and saute in 1/2 cup olive oil (be careful not to burn).
Add the tomatoes and mix well. Add all other ingredients, mix well.
Cook until reduced to a thick sauce. Salt and pepper to taste.

The recipe I used didn’t have any canning instructions. My first thought was WHY NOT? It’s totally full of tomatoes…but when I went back to see what they said, there was no instuctions…so, because I’m a super cautious canner (using USDA approved recipes), I can’t say to GO FOR IT….?? You could FREEZE it safely…but canning it, I don’t know!

Miki I think you’d be more than fine processing 60 for pints or 70 for quarts. That’s what the NCHFP states for spaghetti sauce WITH meat, so I think it may even be an overkill, but ……

this sauce was very sour, very acidic. I’m not sure where it could be used. I tasted it, and it definitely wasn’t to my taste. I gave it to several other people to try, and no one took to it.
I am wondering how it is used, maybe the expectations were wrong, when everyone tried it.

Hmmm, I wonder if something went wrong? Mine wasn’t sour at all. In fact, I used it in soup and for the sauce on pizza and fed it to picky kids and they loved it. Sorry about your experience! 🙁
