Toffee Orange Bars

Ingredients

BASE
1/2 cup butter
1 cup all-purpose flour
FILLING
2 beaten eggs
1 teaspoon vanilla
1 1/2 cups brown sugar
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup chopped walnuts
1/2 cup flaked coconut
ORANGE FROSTING
2 tablespoons butter, softened
2 teaspoons grated orange peel
1/8 teaspoon salt
2 cups powdered sugar
2 tablespoons orange juice

Directions

For the base, cut butter into the cup of flour till it resembles coarse crumbs; press into the bottom of a greased 9 x 13 pan. Bake at 350-degrees for 15 minutes; do not brown.

For the filling, combine eggs, brown sugar, and vanilla in a mixing bowl. Add the two tablespoons of flour, salt, and baking powder. Stir in nuts and coconut. Spread over baked base. Bake for 25 minutes at 350-degrees. Cool.

For the frosting, cream the butter, orange peel, and salt. Blend in the powdered sugar and orange juice, alternating. Spread frosting over cooled bars.

    I made these today for hubby. He loved them! Absolutely delicious!
    The recipe is very simple, uses few ingredients, and really makes a great cookie. I think this would be wonderful for showers or special times.

    I baked these up this past weekend. Very easy, very sweet and very delish! Next time I’m making them in a smaller pan because they were very thin-ish and my crust was very crumbly, so I’m not sure what I did wrong there.

    But worth the time, very sweet & yummy!

    Suzanne, these are an instant new favorite. Thanks for sharing the recipe. The only thing I did differently was add 1/2 cup brown sugar to the crust before baking it, and a quarter sheet pan with buttered parchment worked out well to bake in. We love the chewy coconut and pecans with the toffee taste and bright citrusy orange. I thought these would be good when I saw the recipe, now I know for sure they are!
