This is such an easy recipe, and when peppers start coming in abundantly, we have these a lot. I also stuff with cream cheese mixtures and other cheeses. I found this years ago on the internet, I don’t remember where though.

10 Jalapeno peppers
10 raw medium sized shrimp
10 slices of bacon
Directions
Wash peppers, cut off stem end.
Scoop out seeds and membrane, this is where the heat is (I leave a little, but only a little, for heat). It might be necessary with larger peppers to cut a slit down the side to make this cleaning out easier. I advise using rubber gloves when doing this.
Stuff a raw, peeled shrimp into the pepper.
Wrap a slice of bacon around the pepper, secure with a toothpick.
Place on grill or under oven broiler, cook until bacon is done. I precook the bacon a bit beforehand so cooking time is 2-3 minutes. You don’t want to overcook the shrimp.
