Cake:
2 cups flour
1/3 cup butter softened
1 cup sugar
1 cup milk
3 teaspoons baking powder
1 egg
1 teaspoon salt
Streusel:
1/2 cup chopped nuts
1/3 cup brown sugar
1/4 cup flour
1/2 teaspoon cinnamon
3 tablespoons firm butter
Mix until crumbly
Directions
Streusel Coffee Cake
Heat oven to 350. Prepare streusel. Beat remaining ingredients in large mixer bowl on low speed 30 seconds. Beat on medium speed, scraping bowl occasionally, 2 minutes. Spread half of batter in greased 13” x 9” pan; sprinkle with ½ of streusel. Top with remaining batter. Sprinkle with remaining streusel. Bake until wooden pick inserted in center comes out clean, 35-40 minutes.
Variation: Blueberry Coffee Cake
Omit streusel. Spread ½ batter in pan, sprinkle with 1 c blueberries. Top with remaining batter, sprinkle with 1 c blueberries. Bake in 9 x 13 pan 35-40 minutes. Drizzle warm coffee cake with mixture of 1 c powdered sugar, 1 tsp grated lemon peel and 1-2 T lemon juice.
