A really quick alternative to pie, excellent with scones.

Prep Time: 24 hrs Cook Time: 10 minutesIngredients
3 oz. strawberry Jello
5 c. cut up rhubarb
3 c. sugar
Directions
Put rhubarb and sugar in a saucepan. Cover and leave overnight. Boil 10 minutes,
stir in Jello. Put in pint jars. Cool and freeze.
