I’ve made these many time and they are fantastic. I have only used semi-hot for these. They are sweet and sour and tangy from the ketchup sauce. I save the sauce when the peppers are gone to add to my chili or a drizzle on taco salad. I think there are many foods this sauce would be good on. Oh yes, I put it on meats too. I just can’t say enough good things about this recipe. If you try it I know you will love it.

Enough hot peppers to make 7 qts.
Ketchup Mixture:
6 cups sugar
4 cups vinegar
2 cups oil
2 – 32 oz. bottles ketchup
Directions
Mix Ketchup Mixture ingredients in a sauce and bring to a boil.
Wash peppers and cut into pieces or chunks. I don’t use the seeds. Put peppers into jars, and put garlic pieces in (more or less, how garlicky you like) then pour ketchup mixture in. Process into jars. Hot Water Bath for 15 min.
