I looked a what felt like a million French Onion Soup Recipes then looked at what I had in my cupboards and came up with this it was super yum I used a wonderful French Bread Recipe I found right here!!! http://farmbellrecipes.com/my-french-bread/
Difficulty: Easy
Servings: 12
Prep Time: 15 minutes Cook Time: 6 hoursIngredients
3/4 cup butter
10 onions
1 tablespoon brown sugar
1 tablespoon white sugar
4 or 5 cloves of garlic
1 cup red wine
96oz beef stock
1 teaspoon Worcestershire
1/2 teaspoon dry thyme
2 bay leaves
loaf of french bread
mozzarella cheese
Parmesan
Gruyere (I don’t use this just because I really like mine heavy with mozzarella)
Directions
Heat butter in a large, heavy pot over medium-high heat; cook and stir onions until they become translucent
Sprinkle onions with sugar; reduce heat to medium. Cook, stirring constantly, until onions caramelized ( this takes about an hour)
Stir wine into onion mixture and scrape bottom of pot to dissolve small bits of browned food from the pot.
Stir in garlic and cook until reduced.
Transfer onions into a slow cooker and pour in beef broth and Worcestershire. Stir in thyme and bay leaf.
Cover cooker, set on High, and cook 4 to 6 hours. If desired, set on Low and cook 8 to 10 hours.
About 10 minutes before serving, set oven rack about 8 inches from the heat source and preheat the oven’s broiler. Arrange bread slices on a baking sheet.
Broil bread slices until toasted, 1 to 2 minutes per side.
Fill oven-safe soup crocks 3/4 full of onion soup and float a bread slice in each bowl. Top with cheese mixture per serving.
I really really like heavy cheese on mine so the amount of cheese is up to you.
Place filled bowls onto a baking sheet and broil until cheese topping is lightly browned and bubbling!
ENJOY
