From La Dolce Vegan by Sarah Kramer. This is a tasty alternative to real chicken – and it can be used any way that you you’d use real chicken.

Servings: 2 large or 4 small
Prep Time: 5 minutes Cook Time: up to 1 hourIngredients
Basic Instant Vital Wheat Gluten (make a serving according to package directions)
2 cups water
1/4 cup nutritional yeast
2 Tablespoons tamari (I use soy sauce)
1 teaspoon onion powder
1 teaspoon dried sage
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon celery seed
Directions
In a large saucepan, bring all of the broth ingredients to a boil. Slice gluten and drop into broth (carefully). Reduce heat and cover with lid. Let this simmer 50-60 minutes, being sure to stir the seitan every 10 minutes until the broth is pretty much gone. You can use the “chicken” as you see fit. It will keep about one week in the refrigerator.
