This is a recipe that I modified from a recipe I found online some time ago – sorry, but I have no idea where. You can roll the dough into slightly flattened balls and freeze them. They take slightly longer to bake but are very nice for a small snack after school or with coffee. This recipe doubles very well.

Servings: 10-20, depending on size
Prep Time: 10 minutes Cook Time: 10-20Ingredients
1/2 c butter (room temperature)
1/2 c sugar*
1/2 c brown sugar*
1 egg
1/2 t vanilla
3/4 c AP flour
1/4 c whole wheat flour
1 t baking powder
1/2 t cinnamon
1/4 t salt
1/2 c old-fashioned oats
3/4 c slightly crushed bran flakes**
1/4 c raisins**
* You can substitute 3/4 c turbinado sugar for the regular sugars
** Or just use a cup of raisin bran
Directions
Preheat oven to 350 degrees.
Cream together butter and sugar, then stir in egg and vanilla. Add other ingredients and stir well – a spatula works well as the mixture is very thick.
Drop rounded spoonfuls onto cookie sheet and bake for about 10-15 minutes, depending on the size of your cookies. Be careful not to let them burn because it can happen quickly!

Tried this recipe this morning. The smell of these baking and coffee brewing brought everyone to the kitchen. Very good looking cookies and very tasty! There is no picture because I only made one batch and they were gone before I could finish cleanup. I’m going to try a couple more batches because I want to finish using a box of raisin bran that was left open and the bran is a little “wilted” but worked great in these cookies.

I made these cookies yesterday. They were wonderful. Crunchy, yet chewy. Nice brown sugar taste. The scent in the kitchen while they were baking was driving us crazy. We both burnt our fingers sampling the cookies before they were cool enough. A terrific recipe, Kelly, thank you!
