I wanted to recreate a childhood memory for my boyfriend, but couldn’t find a recipe for the pie he loved as a child. I modified a fruit crumble recipe from Epicurious that I’d made before to make him a pie with his two favorite fruits for Pi(e) Day (3.14).
Difficulty: Easy
Servings: 6-8
Prep Time: 20 min Cook Time: 1 hrIngredients
pastry for 1-crust pie
Filling:
1 1/2 lbs. baking apples, diced (peeling is optional)
2 1/2 c. blackberries, fresh or frozen
6 Tbsp. sugar
1 1/2 Tbsp. cornstarch
1/2 tsp. vanilla
Topping:
1 c. oats
1/2 c. flour
1/4 tsp. salt
1/2 c. margarine or unsalted butter, softened
Directions
Roll out pastry and place in deep-dish pie plate; combine filling ingredients and pour into pastry.
Combine oats, flour, and salt, then cut in margarine. Sprinkle crumbs over pie filling.
Bake in lower third of oven at 425 degrees for 30 minutes, then reduce heat to 350 degrees and continue to bake for another 30 minutes.
