Difficulty: Easy
Servings: 8 or 9 8 oz jars
Cook Time: Boil hard for 1 minute 15 seconds, Process jars accordingly.: 20 minutes for quarts, 10 minutes for pints and 5 minutes for half pintsIngredients
5 cups hulled mashed strawberries
7 cups sugar
1/4 cup lemon juice
1 1/75 ounce package powdered fruit pectin
Directions
Place mashed strawberries and lemon juice in a pot. Stir in pectin until dissolved. Bring strawberries to a strong boil.
Add sugar, then return mixture to a full (violent) boil that can’t be stirred down. Boil hard for 1 minute 15 seconds. Skim foam off the top.
Process into jars, leaving 1/4″ headspace. BWB: 20 minutes for quarts, 10 minutes for pints and 5 minutes for half pints.
