Steak and Potato Hash-A Man’s Breakfast

This original restaurant dish used prime rib, instead of sirloin steak. The smokiness of the dish made it different and so to recreate that I use smoked paprika. If your family, or group, likes spicy, I can see even using a chipotle sauce in this recipe. I do a mens’ breakfast at our church every month. And I like to change up the menu every month but this is their absolute favourite. After a few months, they will start mentioning this dish. I like to serve it with a couple of eggs over easy, bacon, toast and I usually make pancakes or french toast, as well. I fry up the eggs and place them in a warm oven (180 deg.) on a greased cookie sheet. 3 lbs. bacon is cooked in a 375 deg. oven for 20-25 min. the day before. Lay bacon strips between paper towels for about an hour, then lay on dry bread, that covers the bottom of a 9×13 pan, or on a small rack in pan, cover and chill. Heat up in the same oven with potato hash, the next day. You could add vegetables to this dish and make it a main dish for dinner.

Servings: 8-10

Prep Time: steak-20min. potatoes-15 min.   Cook Time: steak-4 to several hrs potatoes-30-35 min.  

Ingredients

1 lb.sirloin steak
1 Spanish onion, diced
1 red pepper, diced
1 1/2 c. barbecue sauce (bottled or homemade)
1 tsp. smoked paprika (mix in with bbq.sauce)

8 med.potatoes, cubed 1″
2 Tbsp olive oil
seasoning (garlic and onion powders, salt and pepper)

Directions

Sear the steak in hot oil on both sides. Layer 1/2 of onion and sweet pepper on the bottom of oven proof dutch oven or crockpot, 1/2 of barbeque sauce, steak on top and cover with the rest of onion, sweet pepper and barbecue sauce.

Cover and place in 325 oven for 4-5 hrs till steak is very tender and can be pulled apart. Or cook in crockpot till very tender – several hrs. Take out of sauce and pull apart into small pcs.

Prepare diced potatoes. Toss through olive oil/seasonings. Spread out in single layer on greased/sprayed baking pan.

Roast at 425 for 30- 35 min. stirring potatoes halfway through, till just tender.

You can now combine the steak and potatoes in a serving bowl, adding more of the barbeque sauce if desired,and serve.

Or to serve later, do as follows:

In a greased/sprayed 9×13, or 2.5 qt./litre, baking dish, mix the steak and potatoes. Add a little more of the barbeque sauce if a little dry. At this point, you can chill this overnite and heat up in the morning – 375 deg. for 45 min. stirring a few times during reheating. When hot, serve.
