1 pound of dried split peas (yellow or green, or mix them if you want)
6 to 8 cups of hot water
1/2 cup diced/sliced carrot
1/2 cup diced/sliced celery
1/4 cup chopped onion
1 cup ham cubes
Salt and pepper if needed
Sort peas (get out the debris they may have missed at the pea farm).
Rinse the peas thoroughly and put in a large pot with the hot water.
Add carrots, celery, onion, and ham.
Simmer covered until tender…and then let it simmer more until “mushy”. Add water if it gets too thick for you.
Serve with multigrain bread or crackers.
