2 cups brown sugar
1 cup water
1/2 pumpkin puree
1 1/2 Tbsp pumpkin pie spice
1 Tbsp vanilla extract
Bring brown sugar, water, pumpkin and pumpkin pie spice to a boil in a large sauce pan over medium heat, stirring constantly, until sugar is dissolved. Lower heat to low and cook 5 minutes until slightly thickened. Remove from heat, add vanilla, and allow to cool. Pour mixture through a strainer then into a covered container and refrigerate up to 3 weeks.
Use this syrup for the Pumpkin Pie Spice Latte.
