Beautiful and delicious peach jelly made from only the peels steamed in my steam juicer.
Difficulty: Easy
Servings: 3 pints
Ingredients
4 cups peach juice from peels
1 box Sure-Jell pectin
2 Tbsp. lemon juice
1/2 tsp. butter or margarine
5 1/2 cups sugar
Directions
Bring juice, pectin, lemon juice and butter (optional to prevent foaming) to a rolling boil. Pour in sugar. Return to hard rolling boil. Boil hard for 1 minute stirring constantly. Pour into hot jars, adjust lids and bands. Process in BWB for 5 minutes.

Thank you so much for posting this. I steam juiced a bunch of peaches and skins last week and had 1 1/2 gallons of beautiful, coral juice. I couldn’t find a recipe for peach jelly. I’ll now be able to make up more beautiful jelly.

I love not letting anything go to waste, so juicing the peels for jelly was great! Peach jelly is our pastor’s favorite. So far, he has requested his third jar 🙂 I might need to make more!
