This is a great brunch or breakfast dish as well as for dinner.

Servings: 6 to 12 depends on hunger!
Prep Time: 1/2 hour Cook Time: 20- 30 minIngredients
1 loaf day old bread (use slices or torn into chunks)
1/2 lb grated cheese (mozzarella, swiss, cheddar, or your favorite)
1 small onion, diced
4 cups sliced mushrooms
2 tsp fresh thyme
5 Tbsp butter
1 cup dry white wine
5 large eggs
1 1/2 cups whole milk
1/2 tsp salt
1/2 tsp pepper
Directions
In a saucepan, saute the onion, mushrooms and thyme in 4 tablespoons of the butter until mushrooms wilt. Add wine and continue to simmer for 10 more minutes.
Use the remaining butter to grease a medium-size baking dish. Start with a layer of bread, then sprinkle cheese followed by onion/mushroom mixture. Repeat until you have three layers, ending with a layer of bread.
Beat together the eggs, milk, salt and pepper and pour over layered strata. Cover and refrigerate for at least 2 hours or overnight (preferred).
Bake in a preheated 350 degree oven for 20-30 minutes or until golden brown on top.
