A wonderful chocolate cake! I’ve begun using homemade mayonnaise in this and it works wonderfully! Also, a trick for a nicely flavored frosting is liquid coffee creamer instead of milk…it makes it richer and beats up creamier!

Cake:
6 Tbsp cocoa
3 cups flour
1 Tbsp baking soda
1/4 tsp salt
1 1/2 cups sugar
1 1/2 cups mayonnaise (I use homemade)
1 1/2 tsp. vanilla extract
1 1/2 cups cold water
Frosting:
1 cup butter, softened
1 cup cocoa
1 tsp. vanilla extract
5-6 cups powdered sugar
6 or more Tbl milk (or use some liquid coffee creamer for a different flavor!)
Directions
Preheat oven to 350 degrees.
Grease and flour cake pan. This will make (1) 9×13 or (2) 8″ round.
Mix dry ingredients well in a bowl.
With an electric mixer at low speed or I just use a whisk, combine mayonnaise, vanilla and water until smooth.
Mix in dry ingredients until just mixed.
Pour batter into cake pans. Bake for 30 minutes.
Cool and frost!
