This is a large recipe because you are making 2 cakes in one. Its REALLY moist and delicious, and cuts pretty. I got the idea for this from sitting it a Sonic Drive-in and seen a picture for red velvet cheese cake blast!! So I went home and made one–with out the ice cream :). I don’t think it needs frosting, but I’m sure you could add it if you like.

Ingredients
2 (8oz) pkgs cream cheese, softened
2 c. sugar
4 eggs
1/2 c. shortening
1/2 c. coco
1 c. cold water
1 1/2 c sifted flour
1/4 tsp. baking powder
1 tsp. baking soda
1 1/4 tsp. vanilla
3/4 tsp. salt
3/4 tsp. red food coloring
2 1/2 c. crushed graham crackers
3/4 c. melted butter
1 8” spring form pan
Directions
Mix butter, 1/4 c. sugar & graham crackers together until moist. Press into the bottom of spring form pan.
Mix together cream cheese, 1/2 c. sugar & 1/2 tsp. of vanilla until creamy. Add 2 eggs, one at a time, blend well. Pour on top of graham cracker crust.
Cream together until fluffy, shortening & 1 1/4 c. sugar. Beat in 2 remaining eggs, one at a time.
In a separate bowl, blend together coco & water. Sift together flour , baking powder, soda, and salt. Add to shortening mixture; adding alternately with coco mixture.
Add vanilla and food coloring. Mix well.
Pour on top of cream cheese mixture very gently. You don’t want them to mix together.
Bake at 350 for 45-55 min or until center is done. Allow cake to cool then take apart the spring form pan.
Cut and enjoy!
