12 lasagna noodles, cooked
1 qt. whole milk ricotta
1 lb. ham, diced small
3 c. chopped fresh spinach
1/2 c. Parmesan cheese, grated
1 lb. mozzarella cheese, shredded
salt and pepper (to taste)
Mix in a large bowl – Ricotta, ham, spinach, Parmesan, eggs, salt and pepper.
Lay out noodles and spoon approximately 1 cup mixture per noodle and roll up, slice into serving size rounds and place in greased 9 x 13 oven dish.
Spoon with Italian tomato sauce, and top with a layer of Mozzarella.
Bake at 350 degrees for 40 min.
