Moist bar cookie and a great way to use fresh figs. From our local newspaper, The Commercial Appeal.

Prep Time: 1.5 hours including soak/chill time Cook Time: 30 minutesIngredients
1 lb dried figs or 2 lbs fresh figs
1/2 or 1 cup water (1 cup for dried figs; 1/2 cup for fresh)
2 cups sugar, divided
1/2 cup butter, at room temperature
1 egg
1 Tbsp cream or milk
1/2 tsp vanilla
1/2 tsp salt
1 tsp baking powder
1 3/4 cup all-purpose flour
Directions
Dice figs. Soak in water for 1 hour. Add 1 cup of sugar and cook over medium heat until the consistency of thin jam.
Beat remaining 1 cup sugar, butter, egg, milk and vanilla until well-blended. Add dry ingredients. Mix well and refrigerate for 1 hour.
Place half of dough on well-floured dough cloth; knead about 6 times. Roll out to 1/4 inch thickness. Line 9 X 13 glass dish with dough. Cover dough with fig mixture. Roll remaining dough and use it to cover figs.
Bake 30 minutes in 350 degree oven. Let cool and cut into squares.
