I freeze these in packages of two for sandwiches for my husband’s lunches. Two halves will make sandwiches for almost 5 days. On the fifth day, he makes a chicken/cheese sandwich or a chicken/egg sandwich. Pound for pound, they are much more economical than lunch meat and waaaay more healthy.
Difficulty: Easy
Servings: about 20 generous sandwiches
Prep Time: 15 mins Cook Time: 7 to 8 hoursIngredients
4 whole chicken breasts or 8 halves
1 Tbsp salt
1/4 tsp pepper, or to taste
other spices of your choice to taste–we like granulated garlic, and I sometimes put use basil and oregano
Directions
Spray the inside of the crock pot with non-stick spray.
Mix your spices together in a small bowl.
If you have whole breasts, separate them into halves.
Start layering the breasts into the crock pot, seasoning each one with some of your spice mixture as you go. Eight half-breasts will probably fill a 6 quart crock pot about 2/3 full, depending on how big they are.
IMPORTANT: Do not add any liquid.
Cook on low for 7 to 8 hours or on high for 4 to 5 hours, or until they are done.
