1/2 lb fresh asparagus, trimmed and cut into 1/2 inch pieces.
5 slices of bacon
1 8-inch unbaked pie shell
2 eggs
3/4 cup of fat free half and half cream
1/8 tsp nutmeg
salt and pepper to taste
1 cup of shredded Swiss cheese
Directions
Preheat oven to 400 degrees. Steam asparagus over 1″ of boiling water. Cover and cook until tender but still firm, about 2 to 6 minutes. Drain and let cool. Microwave bacon until evenly browned. Drain, crumble and set aside. Spray pie shell with cooking spray. Sprinkle crumbled bacon and chopped asparagus into the pie shell. In a bowl beat eggs, cream, nutmeg, salt, and pepper. Sprinkle Swiss cheese over bacon and asparagus. Pour egg mixture over the cheese. Bake uncovered until firm, 35 to 40 minutes. Let cool before serving.
