I was going to make tacos. I got out the meat and defrosted it in the microwave. I put it in the frying pan and thought, “That doesn’t look like beef.”
It wasn’t.
It was pork sausage. So I improvised. I made a Spanish-ish rice mixture and stuffed it in some tortillas.

I used brown rice which is full of good fiber. I’m always happy when I trick my kids into eating healthy. I took four cups of water and brought it to a boil. Then I added two cups of brown rice and turn it down to simmer for 45 minutes.
While that was cooking, I browned the sausage and got the shredded cheese out of the freezer and the salsa out of the cupboard.
Once the rice was done, I poured in the sausage and about a cup and a half of salsa (you can add more or less to taste). I heated that up and added shredded cheddar cheese.
Once the cheese was all melted we put it in soft tortillas with sour cream and guacamole and shredded cheese on top.
Even the kids loved it!!!
