A cool summer pie to make use of the surplus of berries. I’ve made this twice, once with blueberries and the other with blackberries. Both were delicious!
Difficulty: Easy
Servings: 8
Prep Time: 15 minutesIngredients
2 C berries (any berry will do)
4 Tbsp sugar, divided
1 C heavy whipping cream
8 oz cream cheese
1 tsp vanilla
graham cracker pie crust
Directions
Place whipping cream and 2 tablespoons sugar in bowl and beat with an electric mixer until peaks form. In a separate bowl, beat cream cheese, 2 tablespoons sugar, and vanilla. Fold in whipped cream and gently fold in berries. Place in pie shell. Put in fridge (or freezer if pressed for time) for an hour to set.
