Monster cookies are chewy oatmeal, chocolate, peanut butter goodness! The recipe makes a ton, but it’s easy to half or even quarter and both the dough and cookies freeze well. Delicious! (It’s also a wheat-free recipe for those with allergies and can easily be made into a gluten-free cookie as well).
Difficulty: Easy
Servings: TONS! But depends on size of cookie. Plan for 13-15 dozen
Ingredients
12 eggs
2 lbs brown sugar
4 cups white sugar
1 tablespoon vanilla
1 tablespoon Karo syrup
8 teaspoons baking soda
1 pound butter
3 pounds peanut butter
18 cups old-fashioned oatmeal (note: One of those cylinder shaped containers of oatmeal is not enough, buy two!)
1 12 oz bag chocolate chips
1 12 oz bag plain M & M’s
1 12 oz bag peanut M & M’s
Directions
Beat the eggs together. Add butter and mix well.
Add brown sugar, white sugar, vanilla, Karo, Baking soda, and peanut butter. Mix well.
Stir in oatmeal, chocolate chips, and candy.
Drop onto ungreased cookie sheet by huge mounded tablespoon.
Bake in preheated 350 oven for 12-15 minutes.
Allow to cool SLIGHTLY before removing them from cookie sheet (enough that they don’t fall apart when you remove them) but don’t wait too long or the candy will stick.

Karo is the brand name of a corn syrup. Most people that make divinity candy or pecan pies have a bottle of the light or the dark or both syrups in their cupboard. Its so common in the south that we just call it Karo (like Xerox was used for photocopies). There probably ARE other brands but I’ve never bought anything but Karo syrup. My father used to love to pour the dark syrup on his hot biscuits. They put out a really nifty free cookbook with some great candy recipes. Send off for one at http://www.karosyrup.com/cookbookform.pdf.

MMMM, I made a 1/2 batch of these this afternoon. The mix did fill up my large mixing bowl (almost to the top rim), I kept losing oats and chips and m&m’s on my counter, I ate those, it is a lot! I froze half of the cookie mix and baked the rest of the cookies. These are soooo good, thanks for the awesome recipe!

These are really yummy, but I think next time I’ll switch the peanut m&m’s for Reese pieces. This does make enough for an army, you weren’t kidding! A half batch filled my largest bowl. Thanks for the great recipe.
