Quick and easy whoopie pies or ice cream sandwiches made with any flavor of box cake mix. We love the dark chocolate.
Difficulty: Easy
Servings: 24-28
Ingredients
Cake Mix, full size, of your choice
Filling:
5 tablespoons flour
1 cup milk
1cup shortening
1 cup sugar
2 teaspoons vanilla
Directions
CAKES:
Prepare the mix as directed on the package but use only 3/4 cup of water.
at
Drop the batter on to a greased cookie sheet (I use parchment paper instead of greasing the sheets) into 2 1/2 to 3 inch circles.
Bake until a tooth pick inserted into center of a cake comes out clean. Cool cakes.
FILLING:
In a saucepan combine the milk and the flour and cook stirring constantly until mixture forms a thick paste. COOL mixture.
In a medium size bowl, beat the sugar and the shortening unil very fluffy, add the vanilla and and the cooled flour mixture, beat until the mixture is nearly double in volume.
Turn the little cakes on their backs, place a dollop of filling (you judge how much) on one of the cakes and top with another cake to form the whoopie pie.
I wrap each one in plastic wrap.
I have used the cakes to make ice cream sandwiches as well, place the cakes into the freezer just until they are firm, and then fill with SOFT ice cream. Wrap each one in plasric wrap.
