This a creamy, healthy corn dip with a fiesta flair that is great for serving to guests.

2 pkgs. (8oz. each) Neufchatel cream cheese, softened
1/4 c. lime juice
1 Tbs. ground red chilies or chili powder
1 Tbs. ground cumin
1/2 tsp. salt
dash pepper
1 small onion chopped (approx. 1/4 c.)
1 small jalapeno, diced and seeded, opt.
1 can (7 oz.) whole kernel corn, drained or 1 c. frozen corn kjernels, defrosted
6 c. assorted vegetables such as grape or cherry tomatoes, bell pepper strips, carrot, celery strips
or
tortilla chips or crackers
Directions
In large bowl, beat cream cheese, lime juice, chilies, cumin, salt and pepper with mixer on medium speed until smooth. Stir in corn and onion. Chill at least one hour. Serve with fresh vegetable strips or chips/crackers.
