These healthy (don’t tell-they’ll never know!) low-fat chips get pep with the addition of Italian seasoning. For “hot” chips, try Cajun seasoning or add minced garlic.

2 large sweet potatoes (2 lbs) sliced into ¼ inch thick half moons
2 tsp extra virgin olive oil
1 Tbsp. Italian seasoning
Salt
Black pepper
Directions
Preheat oven to 400 F – very important. Oven needs to be hot before baking.
In a large bowl, toss potatoes with oil, seasoning and a pinch of salt and pepper. Spread in a single layer on two large baking sheets and bake for 10 minutes. With a spatula, turn slices over and continue baking until chips are golden, about 7 minutes longer. Serve warm – if they last long enough to get off the baking sheet.
Cook’s note – they do not take longer than 17 minutes. Even one extra minute and they are scorched (i.e., burned)
