I pulled this from a Libby’s pamphlet and have been enjoying it now for years!
Difficulty: Easy
Servings: 8
Prep Time: 15 min Cook Time: 60-65 minIngredients
2 cups all purpose flour
2 eggs, lightly beaten
2 teaspoons baking powder
1 cup Libby’s solid pack pumpkin
1/2 teaspoon baking soda
1 cup sugar
1 teaspoon salt
1/2 cup milk
1 teaspoon ground cinnamon
1/4 cup melted butter or margarine
1/2 teaspoon ground nutmeg
1 cup nuts, chopped
Directions
In medium bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg; set aside. In large bowl, blend eggs, pumpkin, sugar, milk, and butter. Add dry ingredients and nuts; mix until just moistened. Pour into greased 9×5 inch loaf pan. Bake in preheated oven for 60 to 65 minutes, or until toothpick comes out clean. Cool ten minutes. Remove from pan; cool on wire rack before slicing. (I like to add a crumb topping because this loaf is not sweet at all: mix 1/2 c flour, 2 tbsp brown sugar, and then cut in 2 1/2 tbsp butter… can add a few chopped nuts if you want. Put on top of loaf before cooking. Make sure and press thoroughly into the top of the batter or will fall off when you dump loaf from pan!!)
