This is a very fresh summer salad that everyone loves. It also works well for picnics as there is nothing in it that will spoil outdoors. You can also add 1/3 cup freshly grated Parmesan cheese.

1 fennel bulb
1 Granny Smith apple, thinly sliced
1/4 cup chopped pecans, toasted
2 tablespoons lemon juice
2 tablespoons olive oil
1/8 teaspoon salt
1/8 teaspoon pepper
Directions
Trim the fennel bulb, cut in half, and slice very thinly. Slice apple in the same way. Mix and add remaining ingredients; toss well. Cover and chill for one hour.

This salad was really tasty. I made it with fennel I grew in my herb garden. I didn’t have a granny smith apples so I just used what I had on hand. It had a very mild licorice flavor, not at all overpowering. I shared with a friend who is not a fan of licorice and she enjoyed it very much. A new summer favorite.
