Just had to drop a note, Banana and tell you what a great light summer meal this made. I am usually the casserole queen at my house but it was much too hot to have the oven on so I looked here for something to make that was quick. This was perfect.
I did do a couple things differently. My daughter claimed the can of refried beans so I heated them separately in a sauce pan to add or not, as you choose. My advice is to choose to.
I had cheese sauce instead of shredded cheese to add to it. It was good but I kept thinking how much better shredded jack cheese would be in it. Remember I was going for quick here though.
Then we threw the whole thing on individual bowls of shredded lettuce. Everyone but fussy daughter, that is. We topped with taco toppings of our choice, dipped nacho-style chips into the hot stuff on top and then had a nice, soak-y taco type salad left at the bottom when all the dip part was gone.
My boy, who’s comment when he came into the kitchen and saw it cooking was “Mom, what did you do to all that good meat!” (he’s a meat and potatoes sort of guy, unfortunately he seldom gets that) had two huge bowls of it. My husband had three.
If I were serving this for a party, first off I’d do it totally Banana’s way. Then I would smack it right down on the table in the cast iron skillet.
It would look so cool if you had red bandanas laid out to use as napkins. Oh and by the way, use a big skillet. I don’t know if I had more than a pound of meat but this made quite a bit.
