My friend Mae gave me this recipe and it is very good! I serve it over basmati rice with broccoli as a side.

Prep Time: just minutes Cook Time: 5-10 minutes..usually less!Ingredients
1 lb. shrimp (deveined but not shelled.)
salt to taste
1 tablespoon fresh minced ginger
6-8 cloves minced garlic( to your taste)
1 tablespoon curry powder
1 large onion, sliced
small amount of oil to saute shrimp and onions
1/2 fresh squeezed lemon or lime juice
hand full of chopped coriander leaves
Directions
Wash and dry shrimp well with paper towels.
Marinade shrimp with the minced fresh ginger, fresh garlic, salt and curry powder. Leave for at least one hour, overnight is even better.
In a heated skillet (I use my wok), add about 2 tablespoons of oil, and then add onions. Brown nicely until a bit burnt. Then add marinated shrimp to the onions and saute under medium-high heat until shrimps turn pink and are done. Don’t over cook! When you shut off the heat, add the lemon or lime juice; give it a quick stir. Then sprinkle the chopped coriander leaves over it all…Enjoy!
