This is a hardy vegetable casserole, easy and fast to make, great for bring your own dish gatherings. Goes great with just about anything, we eat it all by itself and we usually double the recipe to make sure we have leftovers.

Prep Time: 15 minutes Cook Time: 30 minutesIngredients
4 small cans of mixed vegetables (or 2 large cans), can use frozen with same weight equivalent
1/2 onion, diced fine
2/3 cup mayonnaise
1 cup shredded cheddar cheese
1 sleeve Ritz crackers
1 stick butter
Directions
Drain your canned vegetables or, if using frozen, thaw first and drain the liquid. Place in casserole dish and mix in the diced onion, mayonnaise and shredded cheddar cheese. Make your topping of 1 sleeve of Ritz crackers or similar type with 1 stick of butter melted. Top your veggie mix with the cracker mix.
Bake at 350 for approx. 30 minutes or until brown.

This sounds good, and if crushed pork rinds were substituted for the Ritz crackers, this recipe would be fairly low-carb, too.
