Heard about tomato jam and it sounded really good. Did some research and found one, which I tweaked a bit; original was too sweet and peppers were not included. This will be good on hamburgers, hotdogs, poured over cream cheese with crackers. Use any place you would use catchup.
Difficulty: Easy
Servings: 16
Prep Time: 30 minutes Cook Time: 3 hoursIngredients
3-1/2 pounds tomatoes (I used Romas)
1 small onion, chopped
2-3 jalapeno peppers, seeded, membranes removed and diced
1/2 cup brown sugar
1-1/2 cups white sugar
1 teaspoon salt
1/2 teaspoon ground coriander
1/4 teaspoon ground cumin
1/4 cup cider vinegar
juice of one lemon
Directions
Coarsely chop tomatoes and onions. Place all ingredients in a large, heavy sauce pan. Bring to a boil, lower heat and simmer for approximately 3 hour until thickened. Pulse a couple of times in blender.
Pour into jars and process in boiling water bath for 15 minutes.
