A friend made this for us one year while vacationing at the beach. It’s been a staple since then, some 25 years ago! We eat it at least on New Year’s Day as a way to get our black-eyed peas, but there’s no reason not to eat it more often.
Difficulty: Easy
Servings: 2 or 3 or maybe more
Ingredients
1 can black-eyed peas, with thick pot liquor (like Luck’s or Bush’s)
1 small can chopped green chilis (do not drain)
1 small jar Old English cheese spread
1 small onion, chopped fine, or part of a larger one, or however much you want, just chop it fine
Directions
Place all in a microwave dish. (I use a small, oval antique Pyrex glass casserole dish.) Heat until warm and able to be mixed well. We like crunchy onions, so we don’t really “cook” it, just heat it through.
Serve immediately with tortilla chips. Beer or wine on the side is optional. This should reheat well, but we don’t know because there is never any left.
