A flavorful dish good served over brown rice.

1 lb. (3 cups) dry black beans
1 can pineapple tidbits in pineapple juice
1/4 cup dry minced onion
1 T. fresh minced garlic
1-2 cans diced tomatoes (depending on desired consistency)
3 T. brown sugar
2 T. cider vinegar
2 T. lemon juice
1 t. salt
1 t. basil
1 t. cumin
1 t. coriander
1 can sliced black olives, drained, optional
Directions
Cook beans (I usually use my crock pot and cook overnight). Add the rest of the ingredients and continue to cook on low for at least an hour to meld flavors; adjust seasonings.
