Prep Time: 10 minutes Cook Time: 12-15 minutesIngredients
7-ounce package (2 1/2 cups) flaked coconut
2 tablespoons cornstarch
1/2 cup sweetened condensed milk
1 teaspoon vanilla
1/2 cup strawberry jam
Directions
Combine coconut and cornstarch. Stir in sweetened condensed milk and vanilla. Add jam. Mix well. Drop by rounded spoonful onto greased and floured cookie sheet. Bake at 325-degrees for 12-15 minutes until bottoms are lightly browned. Cool on a wire rack.

I have been looking for an easy recipe for cookies that I could make to send with my husband as a treat for the gang he works with during the holidays, and I think this is it. I would need to triple or quadruple the recipe, and this one looks like I could do that without too much extra work or expense. I might try to make them as bars, and cut the work down even further.
