This is one of my absolute favorite things! I thought it had been around so long that everyone knew how to make it, but I get asked about the recipe at least once every time I make it.
Difficulty: Easy
Servings: 12 + (or one me)
Ingredients
10 oz. package frozen, chopped spinach, thawed, all moisture squeezed out
1 package Knorr’s Vegetable Soup Mix*
1 cup Mayonnaise (not salad dressing)
2 cups Sour cream
8 oz. can water chestnuts, chopped
3 or 4 green onions with tops, thinly sliced
1 Round pumpernickel loaf
*Knorr’s is a commercial dry soup mix in a green and yellow box.
Other brands will work, but Knorr’s is best.
This recipe is printed on the Knorr Vegetable Soup Mix box. I am working on a copycat of the Knorr’s mix 🙂
Directions
In a bowl, mix all ingredients except bread. Chill overnight.
Cut round piece from bread top, tear bite sized chunks of bread from
the loaf to create a hollow.
Spoon well stirred dip into hollowed pumpernickel round loaf.
Serve with the bread pieces and raw vegetables for dipping.

This is also wonderful made with the Knorr’s Leek Soup Mix. In fact I like it better that way. Never added scallions, tho, and only use 1 cup of sour cream and 1 cup mayo.
Every time I serve this I have several requests for the recipe.
