This is a quick and easy recipe that my mother made up when I was little. We always had it at Easter dinner because it was green and “looked like spring” to her.

Prep Time: 15 min? Cook Time: 30 minIngredients
2 cups (or so) prepared white rice
1 10 oz box of frozen spinach
1 small can of cream of mushroom soup
1 8 oz cream cheese
1/2 cup Parmesan cheese
1/2 small onion grated
1/4 tsp garlic powder
salt and pepper to taste
Directions
Prepare rice per package directions..or use leftover rice if you have some. Defrost and drain spinach. Mix together rice, spinach, soup, cream cheese, Parmesan, onion, garlic powder, salt and pepper. Put in a buttered casserole dish and top with more Parmesan. Bake at 350 degrees for 30 minutes. Yum!
