I hang the cheese cloth on a chair spoke and let the cheese drip that way. I use the curds the same day or the next day in lasagna and I give the whey to the chickens.

Ingredients
1 qt. sour milk
2 qt. warm water
Directions
Pour 1 qt. sour milk heated to lukewarm into a cheesecloth bag. Pour 1 qt. warm water over this and after this has drained through, repeat twice. Tie bag and let drip until the whey is drained through.

Just wanted to share with youthat my Oma used to make this all of the time. We would come home from school and find the cheeses cloth bag hanging from a knob on the kitchen cabinet and the drip bowl underneath of it. At that time we thought it was the weirdest thing, why did Oma just go to the store and buy it? You see she is German and yes she was in the war , she learned how to be very resourceful, we would think that you throw out sour milk, but she learned that you can still make something from it. Oma is long passed and I do miss her cheese bag hanging in the kitchen as I miss her. Thank you for the reminder.
