My mom made the recipe as far back as I can remember. Our family hasn’t tried other meatloaf recipes because this one is just so darned good!

Prep Time: 10 minutes Cook Time: 1 hourIngredients
1 1/2 lb. ground beef
1 c. tomato juice
3/4 c. oatmeal
1 egg, beaten
1/4 c. chopped onion
1 1/2 t. salt
1/4 t. pepper
Directions
Preheat oven to 350. Combine all ingredients in large bowl; mix well. Press into ungreased 8 x 4 x 2 loaf pan, or shape a loaf (or two small loaves) in the center of a 9 x 13 pan. Bake about an hour. Let stand 5 minutes before slicing.

My Mom always used oatmeal in meatloaf, so, of course, so do I. It will always be my favorite! She did add chopped bell pepper sometimes to make it special, and we only had onions some of the time so more often than not it was ground beef, oatmeal, eggs and either milk or tomato juice.
