Peppermint Marshmallows!

Ha! Peppermint marshmallows!! I about cried when I saw these on the store shelf. Are they really new? The bag says so. I don’t usually like marshmallows, only in certain things–smores, hot cocoa, and church windows.

Church Windows have been a staple Christmas goodie in our house since I can remember. Mom would make rolls and rolls of them giving a roll out with a ribbon tied around it.

Sam (my niece) was feeling hungry for some, but didn’t want to wait until Grandma made them next week. So we took on the making of our own Church Windows. With peppermint marshmallows!

We gathered everything we needed and headed to Sam’s apartment to make them–an apartment with no room for a kitchen table even and a fifteen inch space of counter. We’re making memories! Now I know why she’s at my house so often 🙂

We used Mrs. Turkey’s recipe here on Farm Bell (I didn’t want to call Mom and her get upset because we were making them ourselves!). Simple, simple ingredients with simple, simple directions.

How to make Church Windows: Printable

1 bag chocolate chips
1 stick butter
1 teaspoon vanilla
1 cup chopped nuts (we didn’t use)
1 cup coconut
1 bag mini marshmallows

Simple!! One of everything!


Melt butter and chocolate chips together.



When melted, take off heat. Add in vanilla (and nuts if using).

Allow to cool, not enough for it to start to harden, but we don’t want the marshmallows to melt when we mix them in. We let it cool for about 10 minutes.

While it’s cooling, set up a 12 inch piece of waxed or parchment paper with 1/2 cup of the coconut spread down the middle.



Pour in the marshmallows and fold together.



Pour down the middle of the paper over top of the coconut. Add the rest of the coconut to the top.



Up until this point, everything was simple, non-hurried.

You sort of have to make this glob into a long roll. Most of the time, Church windows are round. We had issues with ours. Maybe a longer piece of paper may have helped. It started oozing out the end before we had it any sort of a round log.

But we did the best we could!! Who cares if the windows aren’t round? They’re peppermint!! That makes up for everything.

We ended up wrapping this all in aluminum foil to keep everything together.



Let the log chill. We stuck it in the freezer for about 1/2 hour.

Slice and enjoy the pepperminty chocolate goodness!




Sometime this week (at Sam’s apartment again…she has an oven), we’re making a recipe from the back of marshmallow bag!

    Well —-HURRY UP—– I wanna know NOW.
    My favorite anything is peppermint. This sounds like my newest favorite thing,,,,,,only leave out the coconut.

    BTW– This gives me another thought, isn’t there a roll holder for cookies. I made some the other night that were rolled then cut. Darn I can’t use them for CC. they weren’t round, I always have trouble with them, therefore I don’t make rolled cookies. This post could be another reason to shop…..

    Wowsers!!! Looks wonderful minus the coconut. Why on earth have I not heard of these things before. Guess we know what we will be fixing today.

    If you like nuts, use chopped nuts instead of the coconut! Mom used to do that for several people.

    Oh my goodness. I was just coming on the computer to check what oleo was cause I had a brain freeze. Thought I would look at my favorite blog and what were you having posted the same thing I am about getting ready to make, I don’t have peppermint marshmallows You use butter though. I will use butter instead of margarine. I bought parkey to make your fudge. My recipe called them stain glass windows same thing really as yours.

    The colored mini marshmallows are usually always used so it is “stained glass” of many colors. But I like looking through pink glass, too 🙂

    CindyP….my church window cookies never came out perfectly round either….but they were so good. I had to make quite a few rolls to satisfy everyone’s wanting them. I always had a time finding colored mini-marshmallows.
    Today I made snickerdooles….!

    LOVE love love the peppermint mini mallows! Found some by accident at the register at Walmart when we were checking out at the beginning of December. We have been putting them in cocoa, coffee, rice krispie treats, everything!
