I found this in my recipe box. I had cut it out of a magazine some time ago. It smells so good when it’s cooking, and tastes great too!
Difficulty: Easy
Servings: 1 large or 3 small loaves
Prep Time: About 10 min. Cook Time: 50-55 min for large loaf, 30-35 min. for small loavesIngredients
2 c flour
1 c sugar
1 1/2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
¾ c orange juice
1 Tbsp grated orange peel
2 Tbsp shortening
1 egg, well beaten
6 oz dried cranberries (about half of a 10-oz pkg)
1/2 c chopped nuts (optional)
Directions
Preheat oven to 350* (325* for small pans). Grease a bread pan or 3 small pans.
Mix together dry ingredients in bowl.
Stir in orange juice, orange peel, shortening, and egg.
Mix until well blended.
Stir in cranberries and nuts.
Bake for 50-55 min (30-35 min. for small pans) until a toothpick inserted in center comes out clean.
Cool in pans on a rack for 15 min, then remove from pans and cool completely.
Wrap and store overnight.
