This recipe is from a hospice patient I had in Loudon County Tennessee. My grandmother used to make this recipe when I was a kid in London Kentucky. It is definitely old fashioned.

Servings: 6-8
Ingredients
2 cups sugar
1 teaspoon soda
1 tablespoon baking powder
1 teaspoon vanilla
1 cup butter or shortening
6 cup plain flour
1/2 cup buttermilk
2 eggs
Directions
Cream sugar & butter together. Add eggs one at a time, beating after each one. Measure flour. Sift with dry ingredients. Add to butter mixture. Alternating with buttermilk and vanilla. Divide into 6 or 8 parts. Use a floured board and roll out mixture or pat into a well greased pan. Bake @ 400 degrees until brown. Spread fruit spread on top of cake and stack another on top and repeat until all cakes are stacked

On the Chesapeake bay they have a similar cake called the Smith Island cake. made in ten or a dozen very thin layers. Not a low calorie dessert. 😉

This is similar to what I grew up with. We had a dried apple stack cake (that I understand originated in Appalachia) which used dried apples cooked down with various spices to make a thick sauce for putting in between the layers. It was then allowed to sit for several days so that the liquid absorbed into the cake layers.
While it was very heavy, it was sweet and delicious. It was also one of the few desserts we could afford (we usually grew the apples ourselves).
