I usually double this — my kids just love it — very moist and filling! A great change from traditional pancakes!!

1 cup milk
3/4 cup quick-cooking oats
3/4 cup flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 egg yolk, beaten
1 tablespoon cooking oil
2 egg whites, beaten to stiff peak
Directions
Heat milk until hot. Stir in oats and let stand 5 minutes. Combine flour, sugar, baking powder, and salt. Add egg yolks and oil to oat mixture. Add this then to flour mixture until just combined. Fold in beaten egg whites. Cook on 375 degree griddle. Makes eight 4″ pancakes.
