Need a chocolate cake fix but don’t want to make a whole cake? This one fits the bill. Great for a late-night snack. Mmmmm.I adapted it a bit from the link posted.

Servings: 1
Prep Time: 5 minutes Cook Time: 3 to 4 minutesIngredients
1-big coffee mug or Pyrex cup
4 level tablespoons flour
1/4 tsp baking powder or baking soda
4 tablespoons sugar
2 tablespoons unsweetened cocoa
1 small egg, beaten
3 tablespoons milk
3 tablespoons oil
OPTIONAL: 3 tablespoons chocolate chips OR chopped nuts
OPTIONAL GLAZE: equal parts powdered sugar and milk, mix together, two tablespoons each.
1/2 tsp vanilla
1 pinch salt
For a fudgier version, omit egg. It’s fine without it.
Directions
In your microwave-safe mug or Pyrex cup, mix:
Dry: flour, sugar, baking powder, cocoa, salt
In a separate bowl, mix wet together: egg if used,
milk, oil
Add wet to dry, mix well, fold in nuts or chocolate chips if using.
Microwave 3 minutes in 1000 watt oven or 4 minutes in 700 watt oven.
It will puff up and may fall again!
Remove from oven, pour glaze on top if using,
Let cool a couple of minutes and….
Voila!

It’s late, I don’t have eggs, but I wanted cake. Right NOW! This was perfect. I added a tiny pinch of salt and a splash of vanilla to the batter and made it with the baking powder, not soda. I also made some ganache to pour over it. Very easy and SO yummy. Had a delicious desert ready for all 3 of us in about 15 minutes. Definitely a keeper.
