These are best when the peanuts are fresh, but they are most wonderful while still slightly warm from the microwave. I use the glass pie pan and lay the peanuts in a single layer in the pie pan. Be ready to make many batches, tasters seem to show up from nowhere when they get a wiff of the peanuts cooking.
Difficulty: Easy
Servings: couple handfuls
Prep Time: various Cook Time: 5 to 10 minutesIngredients
Raw peanuts ( shelled )
light oil
salt ( I prefer sea salt )
glass pie pan
Directions
Place your shelled raw peanuts in a single layer in a glass pie pan.
Drizzle lightly with olive oil or canola oil. Use a light oil.
Sprinkle lightly with fresh cracked salt. I use sea salt.
Place in microwave and cook on high for 3 minutes. Stir the peanuts and cook for another 2 minutes on high. Check for doneness and crispness. Remember that they are hot so handle carefully. You may need to continue to cook. I do it at 2 minutes settings so that I do not over cook them. Add more salt if needed.
