1/2 # bacon
2 Tbl red wine vinegar
1 Tbl lemon juice
1 tsp white sugar
1/2 tsp pepper
big bunch leaf lettuce or spinach
optional: green onion, thinly chopped, with greens
radishes, thinly chopped
Cook bacon until crispy. Remove bacon to paper towel to drain.
In pan that you fried bacon, add vinegar, lemon juice, sugar, pepper. Heat and stir over medium heat until hot.
In large bowl, mix together lettuce/spinach and any vegetables you’re putting in. Drizzle with dressing and toss to coat well. Sprinkle with bacon.
The amount of lettuce/spinach used and the amount of bacon grease will vary. Use only as much dressing as needed, don’t use too much as it will “drown”.
